Ingredients
8 oz cooked chicken breast, chopped
1 small apple, diced
1 stalk celery, diced
2 Tbsp dried cranberries, preferably unsweetened
2 Tbsp pecans, chopped
2 Tbsp sunflower seeds
½ cup plain Greek yogurt
2 Tbsp olive-oil mayonnaise
1 Tbsp lemon juice
1 tsp Dijon mustard
¼ tsp cinnamon
Salt and black pepper, to taste
Directions
In a medium bowl, whisk together the Greek yogurt, mayonnaise, lemon juice, Dijon mustard, and cinnamon.
Add the chicken, apple, celery, cranberries, pecans, and sunflower seeds.
Stir gently until everything is evenly coated.
Season with salt and pepper to taste.
Serve over a bed of spinach or mixed greens. For a heartier meal, serve in a high-fiber, whole-grain wrap.
